DAVID SPILLARE (Veneto, Italy)
We perhaps, have less to say about our youngest wine maker in the Savio Soares family, just 24yrs old, than his wines do. For David Spillare, his vinous efforts speak louder than words. He manages 3ha in Gambellara, in the hilly region of the Veneto, as custodian of garganega and merlot vines. Care is taken to see that they are nurtured in the most nature way possible, for when he brings them into his cellar (yes, he is wine maker as well), he can create wine without chemical alterations. He knows his land enough to coax the volcanic minerality from the soils. Some of his older vines have been doing this for 40 years. He listens to the land well and responds with cover crop to promote healthy life within the earth. He prunes the vines and harvests his grapes, by hand, and with careful selection. In a few words, he is doing everything right. In the cellar, he uses natural processes as well and avoids intervention beyond mere guidance. Even the addition of sulphur is gently handled. All of this thought and process (or non-process) goes quietly into each of David’s 2 wines. For someone so young, he is wise beyond words. Enough said.
Bianco Rugoli 200940% Lambrusco Maestri 40% Lambrusco Salamino 20% Malbo Gentile all hand harvested on the flat sandy-clay soils. Vinified using natural yeasts after 6-8 days of maceration. Once started, fermentation continues in the bottle. There is no filtration or disgorgment. SO2 is minimal. 6-8mos bottle ageing before release.
